Chinioti Pulao Recipe by Shireen Anwer

Delicious and simple recipe of  chinioti Pulao Recipe.

Ingredients:

  1. Mutton –  1 kg
  2. Rice –  1 kg
  3. Oil –  1 cup
  4. Onion –  2 cups sliced
  5. Ginger garlic paste –  2 tbsp
  6. Salt –  1 tbsp
  7. Chili powder –  ½ tbsp
  8. Green chilies –  15
  9. Tomatoes –  2
  10. Black cardamom –  2
  11. Black pepper –  1 tsp
  12. Cinnamon –  2 sticks
  13. Cloves –  1 tsp
  14. White cumin seeds –  1 tsp
  15. Aalo Bukhara –  10

Method:

  • Take a pan add 4 cups water, meat, whole green chilies, ginger garlic paste, chili powder, salt, whole spices and soaked aalo Bukhara, cover and cook for 30 min.
  • Then add coarsely chopped tomatoes and cook till meat nearly tender.
  • In another pan heat oil, fry sliced onion when onion brown add ¼ cup water, now add the tender meat, fry well.
  • Then add the left over stock with 3 cups water and bring to boil.
  • Then add soaked rice, cook for 10 min when water dries put on dum.
