  1. Olive oil – 1 tbsp
  2. Onion – 2 chopped
  3. Carrot – 3 medium chopped
  4. Thyme – 1 tbsp leaves, roughly chopped
  5. Chicken stock – 1.4 l
  6. Roast chicken – 300 g leftover shredded and skin removed
  7. Frozen pea – 200 g
  8. Greek yogurt – 3 tbsp
  9. Garlic clove- 1 crushed
  10. Squeeze lemon juice
How to Make Mutton Paya Recipe


  • Heat oil in a large heavy-based pan. Add onions, carrots and thyme, then gently fry for 15 mins.
  • Stir in stock bring to a boil, cover, then simmer for 10 mins.
  • Add the chicken, remove half the mixture, then purée with a stick blender.
  • Tip back into the pan with the rest of the soup, peas and seasoning then simmer for 5 mins until hot through.
  • Mix the yogurt, garlic and lemon juice, swirl into the soup in bowls, then serve.
