Mutton chops marinated beautifully in a host of spices delicious and then cooked with distinctive flavours of cinnamon, saffron and mace for spicy EID day.

Ingredients;

  1. mutton chops – 6 – approximately 500 gm

For the marinade:

  1. Salt – 3/4 tsp
  2. Medium onion – 1
  3. Garlic cloves – 6
  4. Ginger piece – 2.5 cm
  5. Coriander powder – 2 tsp
  6. Red chilli powder – 1/2 tsp
  7. Garam masala – 1 tsp
  8. yogurt – 1/2 cup

For cooking:

  1. Oil – 4 tbsp
  2. Cloves – 8
  3. Black peppercorns – 10-12
  4. Cinnamon piece – 2.5 cm
  5. Piece mace – 1
  6. Pinch of saffron diluted in water

How to Prepare Chaap;

  • For the marinade:Grind the onion, ginger and garlic to a paste.
  • Mix in the remaining spices and yogurt.
  • Flatten the chops with a kitchen hammer and marinate for 4-6 hours.
  • Final preparation:To cook, heat the oil in a pressure cooker;
  • add all the spices and when they start spluttering add the chops with the marinade and stir well.
  • Cover lightly and cook for 10 minutes on medium heat.
  • Remove the lid and cook further for 10 minutes.
  • Cover and pressure cook the chops for another 10 minutes.
