Chef Mehboob Khan Chapli Roll Paratha Recipe


To make Filling;
  1. Grated Radish – 4
  2. Ajwain – 1/4 Tsp
  3. Cumin Seeds – 1/2 Tsp
  4. Ginger – 1 Tsp
  5. Green Chilies – 2
  6. Chili Powder – 1 Tsp
  7. Garam Masala – 1/2 Tsp
  8. Amchur Powder – 1/2 Tsp
  9. Coriander Leaves
  10. Oil
  11. Salt
To make Dough;
  1. Wheat Flour – 2 Cups
  2. Ajwain – 1/2 Tsp
  3. Salt
  4. Water
  5. Oil
To make Raita;
  1. Curd – 400 Gms
  2. Salt – 1/2 Tsp
  3. Chaat Masala – 1/4 Tsp
  4. Tomato – 1 No.
  5. Green Chili – 1 No.
  6. Coriander Leaves


  • Mix wheat flour, carom seeds, and water and knead it to get a dough.
  • Kneading until you get a crack free dough.
  • A smooth dough helps in making better parathas.
  • Rest the dough for 30 mins.
  • Grate the radish/ mooli.
  • Take that in a bowl.
  • Sprinkle some salt and let it rest it for about 15 minutes.
  • After 15 mins, squeeze out all the water.
  • Squeezing out excess water makes it easier while rolling out the parathas with the filling.
  • Heat the oil in a pan on medium heat.
  • Once hot add ajwain, cumin seeds.
  • Let them sizzle a bit.
  • Then add chopped green chilies, chopped ginger and grated radish.
  • Mix well.
  • Add dry spice powders and mix.
  • Cook till mixture becomes dry.
  • Make sure that, it does not have any moisture in it.
  • Transfer it to a bowl and let it cool completely.
  • After the dough is rested, knead it again for a minute.
  • Divide the dough into equal sized dough balls.
  • Flatten the dough balls and place the cooled filling in the centre.
  • Fold the flattened dough with the filling into a parcel.
  • Flatten it again and roll it out.
  • Roll out all the dough balls in the same way.
  • Heat a tawa.
  • Place the rolled out parathas onto the hot tawa.
  • Flip the paratha once it is cooked on one side.
  • Add some oil on the edges and cook on both the sides till they turn golden.
  • Serve the Mooli Paratha hot with thick curd and pickle.
