Beef Chili With A Twist by Shireen Anwer

Ingredients:

For Cooking Mutton :

  1. Lamb/ mutton – 750 gms
  2. Kashmiri red chilli powder – 2 tsp
  3. Salt – 1 tsp
  4. Lime juice – 1 tsp
  5. Turmeric powder – 1/2 tsp
  6. Oil – 1 tblsp

For Gravy:

  1. Leaves – 1 bay
  2. Cinnamon – 1/2 stick
  3. Cloves – 2
  4. Cardamoms – 2
  5. Onions – 2 sliced (medium to large size)
  6. Tomato – 1- chopped
  7. Ginger – garlic paste – 1 tblsp
  8. Green chilly – 1
  9. Kashmiri red chilli powder – 1 tblspn
  10. Black pepper – 1 tbspn cracked
  11. Coriander powder – 2 tblsp
  12. Garam masala powder – 1 tsp
  13. Yogurt – 2 tblsp
  14. Kasuri methi leaves – 2 tsp crushed
  15. Coriander leaves – few

Method:

  • Normally for mutton karahi,the mutton is cooked in a deep pan. It’s little bit time consuming process.
  • So here I have first semi cooked the mutton in pressure cooker and then placed to the pan.
  • Heat oil in a pressure cooker and add the mutton pieces and fry for 5 to 10 min.
  • This gives a nice glaze to mutton.
  • After 5 min,add red chilli powder,turmeric powder,lemon juice,salt with little amount of water. Cook for 3 to 4 whistles.
  • In a deep pan and add whole garam masala .
  • Add ginger-garlic paste and saute until raw smell goes off.
  • Then add onions and fry until onions change their color.
  • To this add the tomato pieces and green chillies.
  • Add coriander powder,red chilli powder,garam masala powder and salt.After sauting for a min, add a little amount of water.
  • Now add lamb pieces and yogurt to this.
  • Add required amount of water and cook on low to medium heat.
  • Finally add black pepper,coriander leaves and kasuri methi leaves and cook for another 5 min.
  • Take it out in a dish and garnish with coriander leaves.
  • Serve hot with naan bread or tandoori roti.
