Nargisi Kofta Recipe Pakistani

Ingredients;

 

Hyderabadi Mutton Paya recipe

 

For the kofta;
  1. Beef –  900g ground
  2. Onions small  –  1½
  3. Turmeric –  ½ tsp
  4. Cumin –  1 tsp
  5. Green chillies –  2
  6. Egg – 1
  7. Ginger –  1.2cm piece
  8. Garlic –  3 to 4 cloves
  9. Red chilli powder –  1 tsp
  10. Coriander powder –  1 tsp
  11. Garam masala  – 1 tsp
  12. Egg  – 1
  13. Whole wheat flour (atta)  – ½ cup
  14. Baking powder  – ½ tsp
  15. Salt, to taste

For the gravy;

  1. Onion large  –  1
  2. Tomato large  –  1
  3. Yogurt  – 2 tbsp
  4. Green chillies  –  2
  5. Red chilli powder –  1 tsp
  6. Turmeric  –  ½ tsp
  7. Cumin seeds –  ½ to 1 tsp
  8. Coriander powder  –  ½ tsp
  9. Cloves –  4 to 6
  10. Peppercorns –  8 to 10
  11. Cardamom black  –  1
  12. Cinnamon stick  –  1
  13. Ginger –  1 tsp fresh
  14. Garlic –  1 tsp fresh
  15. Garam masala –  ½ to 1 tsp
  16. Salt, to taste

Method;

  • Boil six eggs till hard-boiled.
  • Soak in cold water and peel.
  • Set aside.

To make the kofta:

  • Put all the ingredients for the kofta in a blender and blend well.
  • Divide into six equal portions.
  • Wrap a portion of the meat mix around one egg and smooth with the hands to form a meat shell around the egg till it is fully covered.
  • Repeat for the other hardboiled eggs.
  • Place all on a plate.
  • Sprinkle the coated eggs with a fine dusting of rice flour.
  • Heat oil for deep frying in a deep pan.
  • Whisk an egg in a bowl and dip each meat coated egg in the whisked egg, gently shake off the excess and deep fry till golden.
  • When done, drain and place on paper towels.

To make the gravy:

  • In a quarter to half cup oil, brown onion, then add tomato and yogurt.
  • Stir at high heat for a few minutes, process in the blender, pour back into the pot, stir and cook over high heat, adding all spices, ginger and garlic.
  • Cook for a few minutes, adding hot water as necessary.
  • Let simmer, add kofta and garam masala.
  • Let simmer until kofta is cooked and oil separates.
  • Enjoy with a side of naan.
