Speedy Ginger Ice Cream with Chilli-Chocolate Sauce

Ingredients:

  1. Stem ginger – 75 g finely chopped
  2. Syrup from the ginger – 3 tbsp
  3. Vanilla ice cream – 1 l tub softened

For the chilli-chocolate sauce:

  1. Dark chocolate – 300 g chopped
  2. Chilli flakes – pinch
  3. Whole milk – 200 ml
  4. Double cream – 100 ml
  5. Golden caster sugar – 25 g
  6. Cones, to serve (optional)

Method:

  • Stir the ginger and syrup through the ice cream, then return to the freezer to firm up for at least 1 hr.
  • Put the chocolate and chilli in a large bowl.
  • Bring milk, cream and sugar to the boil, then remove from heat and pour over the chocolate.
  • Leave to stand for 2 mins, then whisk until the chocolate is melted.
  • Serve warm with a scoop of ice cream.
