Tandoori Chicken Biryani Gulzar

Ingredients for chicken:

  1. Whole chicken – 1 kg or 1 1/2 kg
  2. Crushed black pepper – 1 tsp
  3. Garam masala powder – 1/2 tsp
  4. Red chili powder – 2 tbsp
  5. Lemon juice – 4 tbsp
  6. Ginger garlic paste – 3 tbsp
  7. Oil – 3 tbsp
  8. Yellow food color – 1 pinch
  9. Salt – to taste

Method for chicken tandoori:

  • Take a mixing bowl add lemon juice, red chili powder, garam masala powder, black pepper, yellow food color, ginger garlic paste and salt, mix well.
  • Then put apply this mixture on whole chicken in a bowl and marinate.
  • Steam the chicken with steamer for 15 to 20 minutes and turn the chicken over to ensure both the sides are fully cooked.
  • Now placed the chicken in oven tray and brush the chicken with ghee or oil.
  • Put the tray into pre-heated oven for 12 to 10 minutes.
  • Chicken is ready.

Ingredients for biryani:

  1. Rice – 1/2 kg
  2. Fried onions – 2
  3. Tomatoes – 3
  4. Black cardamom – 3
  5. Cloves – 4
  6. Whole green chilies – 4
  7. Green coriander – 1/2 bunch
  8. Mint – 1/2 bunch
  9. Dry plums – 1/2 cup
  10. Oil or ghee – 1/2 cup
  11. Cinnamon sticks – 2
  12. Garam masala powder – 1 tsp
  13. Red chili powder – 1 tbsp
  14. Black cumin – 1/2 tsp
  15. Ginger garlic paste – 2 tbsp
  16. Salt – to taste

Method for rice:

  • Soak rice in water for 2 hours.
  • Now boil rice with black cumin and salt in a saucepan and cook till the rice is half done, strain the water.

For Korma:

  • In a skillet heat up ghee or oil, then add black cardamoms, cinnamon sticks and cloves.
  • Fry till the spices begin to sizzle.
  • Then add chopped tomatoes, mix well.
  • Now add whole green chilies, plums, ginger garlic paste, garam masala powder and red chili powder.
  • Fry for  another 2 minutes .
  • Then add brown onions and cook until a uniform mixture is formed .
  • The korma is ready.

Final Preparation:

  • Put  the korma in a skillet and add 1/2 layer of rice over it. Now add chopped  green coriander, chopped  mint, green chilies and fried onions.
  • After that put the remaining korma. Then put the remaining rice followed by the coriander, mint, green chilies and fried onions.
  • Now in a cup mix the water and food color and pour  it on sides of the skillet. Then put the chicken over the rice and cook it for 7 to 5 minutes over high flame.
  • Then cover and simmer over a low flame for 5 minutes.
  • The chicken tandoori biryani is ready to serve.
