Whole Baked Raan Recipe

Ingredients ;

  1. Leg of lamb – 1 1/2 kg
  2. Onions, chopped – 3
  3. Whole garlic cloves – 3 Tbsp
  4. Ginger – 2 pieces of sliced
  5. Black peppercorns – 1 Tbsp
  6. Water to cover

For the marinade:

  1. Yoghurt – 3 Tbsp hung
  2. Lemon juice – 2 Tbsp
  3. Grated ginger – 1 tsp
  4. Coriander paste – 2 Tbsp
  5. Roasted, ground coriander – 1 Tbsp
  6. Roasted, ground cumin – 1 tsp
  7. Chilli powder – 1 tsp
  8. Nutmeg powder – 1/2 tsp
  9. Oil – 4 Tbsp

For mint chutney:

  1. Mint leaves – 4 Tbsp
  2. Chopped coriander – 2 Tbsp
  3. Green chillies – 4
  4. Garlic paste – 1 tsp
  5. Sugar – 2 tsp
  6. Lemon juice and salt – 3 Tbsp

How to Make Whole Baked Raan

  • Place lamb in a large pan with onions, garlic, ginger, pepper and some water.
  • Cook for 30 minutes.
  • Cool the lamb with liquid.
  • Score meat with a sharp knife.
  • Combine marinade ingredients.
  • Rub it into meat and set aside for 5 hours.
  • Bake leg in a very hot oven at 220 degrees Celsius for 30 minutes.
  • Baste occasionally with oil.
  • For the mint chutney, grind all ingredients together.
  • Serve with meat.
