Nargisi Kofta Recipe Pakistani
Ingredients;
Hyderabadi Mutton Paya recipe
For the kofta;
- Beef – 900g ground
- Onions small – 1½
- Turmeric – ½ tsp
- Cumin – 1 tsp
- Green chillies – 2
- Egg – 1
- Ginger – 1.2cm piece
- Garlic – 3 to 4 cloves
- Red chilli powder – 1 tsp
- Coriander powder – 1 tsp
- Garam masala – 1 tsp
- Egg – 1
- Whole wheat flour (atta) – ½ cup
- Baking powder – ½ tsp
- Salt, to taste
For the gravy;
- Onion large – 1
- Tomato large – 1
- Yogurt – 2 tbsp
- Green chillies – 2
- Red chilli powder – 1 tsp
- Turmeric – ½ tsp
- Cumin seeds – ½ to 1 tsp
- Coriander powder – ½ tsp
- Cloves – 4 to 6
- Peppercorns – 8 to 10
- Cardamom black – 1
- Cinnamon stick – 1
- Ginger – 1 tsp fresh
- Garlic – 1 tsp fresh
- Garam masala – ½ to 1 tsp
- Salt, to taste
Method;
- Boil six eggs till hard-boiled.
- Soak in cold water and peel.
- Set aside.
To make the kofta:
- Put all the ingredients for the kofta in a blender and blend well.
- Divide into six equal portions.
- Wrap a portion of the meat mix around one egg and smooth with the hands to form a meat shell around the egg till it is fully covered.
- Repeat for the other hardboiled eggs.
- Place all on a plate.
- Sprinkle the coated eggs with a fine dusting of rice flour.
- Heat oil for deep frying in a deep pan.
- Whisk an egg in a bowl and dip each meat coated egg in the whisked egg, gently shake off the excess and deep fry till golden.
- When done, drain and place on paper towels.
To make the gravy:
- In a quarter to half cup oil, brown onion, then add tomato and yogurt.
- Stir at high heat for a few minutes, process in the blender, pour back into the pot, stir and cook over high heat, adding all spices, ginger and garlic.
- Cook for a few minutes, adding hot water as necessary.
- Let simmer, add kofta and garam masala.
- Let simmer until kofta is cooked and oil separates.
- Enjoy with a side of naan.
